Biscuits & Gravy
Biscuit Ingredients:
- 2 cups sifted flour
- 3 tsp baking powder
- 3/4 tsp salt
- 5 tbs shortening
- 3/4 cup cultured buttermilk
Sift flour, baking powder and salt together. Cut in shortening until mixture looks like a coarse meal using a pastry blender or two knives. Add milk and stir lightly until soft dough is formed. Turn onto lightly floured board and knead quickly and lightly about 20 times.
Roll dough to 1/2-inch thickness and cut with floured 2 inch biscuit cutter. Bake on ungreased baking sheet for 12 to 15 minutes at 475F.
Gravy Ingredients:
1/2 of a roll of Jimmy Dean 16oz Premium Pork Sausage Regular
1/2 C of sifted flour
1 Qt of 2% Milk
Salt & Pepper(to taste)
Place the sausage in a frying pan on medium heat. Brown the meat while breaking the sausage down into small tiny pieces. If there are chunks of meat, then use a food processor to chop them into finely ground pieces, and return to the pan. Dust the browned meat with the flour, stirring the entire mixture to assure that everything is evenly coated with the flour.
Turn the burner down to a medium low heat. Slowly add about 1/2 of your milk, continually stirring the mixture in the pan. As the gravy starts to thicken as it bubbles (a light boil), add just a little more of the milk, just enough to thin it down to a manageable consistency. If the gravy gets too thick add a little more milk to thin it down.
Split open a biscuit and cover each half with the hot gravy and salt and pepper to taste. Enjoy.
